The heated milk is pumped to the milk distribution channel of the roller dryer at a predetermined flow rate and steam pressure of 4.5 ± 0.3 bar (448 ± 34 kPa). Khoa powder formed in thin sheets is then scraped, ground, sieved, and packaged. Spray drying is used in the large-scale manufacture of khoa powder.
